William Lendway spent years advancing in culinary arts before pursuing an additional degree in nutrition. Through numerous accidental opportunities at the University of Minnesota which he embraced, he fell in love with teaching and found value in his unique background. His research interests include whole grains, the culinary creative process, and how to incorporate new (to us) foods into our diets. He continues to work with local community nutrition projects in both Minnesota and Rhode Island. He also owns and operates a mobile food establishment during the summers in Rhode Island.
